The ketogenic diet

The ketogenic diet is a dietary approach based on a significant reduction in carbohydrates, with a moderate intake of protein.

The goal is to bring the body into a metabolic state known as ketosis, a condition in which the body, with only a limited amount of sugar available, begins to use fat as its main source of energy.

Under normal conditions, our body gets much of its energy from carbohydrates found in foods such as bread, pasta, rice, potatoes, sweets, high-sugar fruit and many traditional baked goods. These carbohydrates are converted into glucose, which provides an immediate source of energy for cells, muscles and the brain.

When carbohydrate intake is significantly reduced, glycogen stores in the liver and muscles tend to decrease. At this point, the liver produces molecules known as ketone bodies, which are generated from the breakdown of fats. These compounds can be used by different tissues as an alternative source of energy.

The amount of carbohydrates allowed may vary depending on the type of protocol followed and on individual goals. In fact, there is no single model of ketogenic diet. Over time, different approaches have been developed, some used in clinical settings and others more widely adopted in everyday nutrition.

Foods often included in this type of diet include eggs, fish, meat, some dairy products, nuts, seeds, vegetable oils and low-carb vegetables. Foods rich in sugars and starches are generally limited instead, such as traditional bread, pasta, rice, sweets, sugary drinks and “traditional” packaged snacks.

In recent years, product ranges such as K-TO have become increasingly popular, designed for those who want to reduce sugar and carbohydrate intake without giving up some traditional baked goods.

If you would like to learn more about how the ketogenic diet works, it is always useful to consult other authoritative sources and, where appropriate, seek advice from qualified professionals.
